$1 avocados called for this epic guac-salsa fajita night.

For my twist on guacamole you will need:

4 avocados

3 roma tomatoes, seeded

1 yellow or orange bell pepper

3/4 jalapeno

1/4 diced onion

1 garlic glove

1 lime

chili powder, salt & pepper

I did a simple salsa with:

4 roma tomatoes

All of the ingredients you need to throw together these mini burgers in 10 min are most likely already in your fridge. I’m really feeling pesto so I decided to make Pesto Mini’s. I went to the grocery store & bought 1/3 lb of ground sirloin for $1.60, so that’s how much this meal cost me to make.

Today in Political Science we were discussing same-sex marriage. No one was really participating when asked how we feel about the topic, so our teacher was like, “I thought this was going to fire you guys up… What should we talk about instead, the environment?!” That got people laughing and contributing a little, but then this random ass girl pipes in by saying, “I think that two men should not exchange proteins. It’s a health issue & I have learned about Auto-Immune Deficiency.”

Today I watched the latest RuPaul’s Drag Race, & I think one of the contestants said it perfectly, “Marriage is not a luxury.  It’s a human right.” Human; man or woman.

Anyway, today has not been the smoothest day for me.

First, my art class got cancelled which I woke up for & drove all the way to school for.  Then the soles of both of my shoes randomly fell off within 1 hour of eachother (yah they were old, but really now?). I printed a typo in my article for Journalism. THEN after shooting a full roll of film for my 2nd assignment, it ripped when I was rewinding it.

C’est la vie?  Well, on the bright side I got new shoes today.  & I’m going into the dark room tonight to attempt to roll my film by hand & then develop so I can print tomorrow during my lab.

Also, I’m on my 3rd Starbucks coffee of the day… so when life gives you lemons, make lemonade… Which I literally did today around 11:30 from real lemons.  It turned out pretty tasty, not gonna lie.
